If you’re ever in a rush and need to contribute something for a dinner or are looking for a tasty dessert option… Cream Puffs are the answer!
Here’s an amazing, straight forward and pretty fool proof recipe that my
boyfriends stepmom, Carol shared with me.
Yield = about 35 – 40
Things you need:
Parchment paper
Baking pan(s)
Measuring cup
Measuring spoons
Electric mixer
Spatula
Mini spoon
Small sifter
Pastry bag
Bowls
Dessert tray/platter
Cream Puff craving (essential!)
Cream filling:
2 packages instant vanilla pudding mix (any brand will do)
2 cups heavy cream (3 x 170g cans)
1 cup milk (I prefer almond milk)
1 tsp Vanilla
2 tbls sugar
Puff pastry:
1/2 cup butter
1 cup water
1/4 tsp salt
1 cup all purpose flour (I used whole wheat flour instead)
4 large eggs
Additional:
• Icing sugar
Directions for making cream filling:
• Mix together vanilla instant pudding, cream, milk, vanilla, and sugar
• Cover and refrigerate to set
Directions for making puff pastry:
• Preheat oven to 425 degrees F (220 degrees C)
• In a medium/large pot, bring water and butter to a boil
• Stir in flour and salt until mixture forms a ball
• Transfer dough to a large mixing bowl
• Use electric mixer to beat in eggs one at a time (mix well)
Cream Puff assembly:
• Fill pastry bag with batter mixture and squeeze a small peanut shape onto baking sheet (the more you use the bigger the puff pastry and the reverse)
• Bake for 20-25 minutes until golden brown (cut one open to see if the inside is dry, if not bake for another few minutes)
• Place shells on a cooling rack
• Cut puffs open and fill using a spoon or you can fill a clean pastry bag with pudding mix and pipe the pudding into the shells
• On a large plate, using mini sifter, pour a couple spoonfuls of icing sugar and dust onto cream puffs
• Transfer onto a dessert tray or platter
And voila!! These things are a guaranteed hit! Enjoy 😄
